Banana Loaf Cake

In a fruit bowl there’s always 1, if not 2, bananas that no-one will touch, they either look ‘inedible’ because the skin is turning black or too sweet in taste when you do attempt to eat, and more often than not, end up on the compost heap! 

This is what I do: turn them into cakes, everyone will want a slice or two.

Homemade Banana Loaf Cake
Note: I have used 1 large Banana, you could use 2 small ones for this recipe
Fruit Bowl
Preheat Oven: 180˚C/350˚F/Gas Mark 4

Ingredients:
120g Softened Unsalted Butter
120g Caster Sugar
    2  Large Eggs
140g Self Raising Flour
1 tsp Baking Powder
1 tsp Mixed Spice powder
    1  Large or 2 small Bananas
To decorate:
50g (approx) Icing Sugar    
Ingredients
Method:
  • Grease and Line loaf tin.
  • Cream butter and sugar.
  • Beat in egg at a time.
  • Sift Flour, baking powder and mixed spice.
  • Peel and mash banana(s); add to flour mixture.
  • Fold mixtures together.
  • Carefully spread the mixture into the lined tin and bake for 30-40 minutes or until the skewer comes out clean when inserted into the centre.
  • Allow to cool (completely) on a wire rack
  • Decorate with Icing sugar paste: add 1-2 tbsp of water to the icing sugar and drizzle.
  • Will keep in an air tight container for up to 2 days.
